Onda-Onda is a luxury, creamy dulce de leche. Based on the best of the best dulce de leche from Uruguay, Argentina and Brazil.

Onda-Onda Dulce de Leche Repostero is a dulce de leche of Catering grade (also known as Pastelero). This is a speciality dulce de leche that maintains its height and shape for baking applications such as cake fillings, cones to coat with chocolate.

Onda-Onda repostero can be piped or spread and due to its much firmer texture than regular dulce de leche it will retain this shape. So when used as a cake filling, alfajor filling, cone shape for coating with chocolate, or any other shape you can create it will stay this way, and not slowly ooze or melt back to a liquid form like a regular dulce de leche will.

The flavour is also more intense, so it is idea for making mousse, icecream, frosting etc.

What is Dulce de Leche?

Dulce de leche is an important dessert ingredient which is highly popular across South and Latin America. It is also popular Spain and is sometimes also known as “manjar”. It is produced by condensing down milk and sugar over many many hours until a thick, creamy caramel spread results. The creamy, toffee taste is the famous “offee” of Banoffee Pie.

In South America is it used as jam might be used in the UK for example as a cake filling, on toast, as an ingredient use with biscuits, cupcakes, rice pudding and a pancake filling. Great for alfajores

I make alfajores regularly and buy the “repostero “ version as it is normally a bit more solid so makes filling (and eating!) the alfajores easier. Onda Onda is perfect for this. You need a long knife to get to the bottom though as the jar is so tall. Would definitely recommend
